Fresh Garden Salsa Recipes

DELICIOUS GARDEN SALSA 

3 ripe tomatoes
1/2 cup tomato sauce
1 white onion
1 bunch of cilantro
1 green bell pepper
1 jalapeno pepper
2 green chili peppers
2 teaspoons garlic powder
1 tablespoon salt

Add all ingredients to bowl after cutting.

Dice tomatoes, and put into a medium size mixing bowl. Dice green bell peppers to a small size.
Cut cilantro finely. Dice onion. Dice peppers very finely. Add your dry ingredients.

Finally, add tomato sauce and refrigerate.

GARDEN SALSA 

8 lg. plum tomatoes, diced fine
1 lg. cucumber, peeled, seeded and diced
3/4 c. chopped green onion
1 tbsp. minced seeded Jalapeno chili
1 1/2 tsp. minced garlic
3/4 tsp. Salt

Combine all ingredients in mixing bowl. Can be made ahead. Cover and refrigerate up to 24 hours.
Makes about 6 cups.

Black Bean Salsa

2 – 15 oz. cans of Black Beans, rinsed and drained
3 large Tomatoes or 12 Roma tomatoes, diced
3 Green Onions, diced (including green tops)
4 cloves Garlic, minced
1 Jalapeno Pepper, de-seeded and finely minced
¼ cup chopped fresh Cilantro
2 TBS Vegetable Oil
Salt and Pepper to taste 

Combine all ingredients in bowl.  Cover and refrigerate overnight to allow flavors to blend.

Fresh Summer Salsa

 

8 Roma Tomatoes, quartered

1 medium Onion, diced

3 cloves Garlic, minced

½ green Bell Pepper, seeded and diced

¼ - ½ fresh Jalapeno Pepper, seeded and minced

2 TBS fresh Lime Juice

1 tsp Salt

1 tsp Black Pepper

 

Combine all ingredients in large bowl.  Cover and refrigerate for flavors to combine.
